Gazpacha olives are a type of olive with a traditional dressing of the Mediterranean cuisine, a mixture of ingredients and spices that give them a characteristic flavor. They are a healthy and natural alternative to conventional salty snacks and an ideal accompaniment to salads and other dishes. A product suitable for vegans, gluten-free and lactose-free, handmade from organic olives produced in-house and other natural ingredients.

Origin

VidaViva Ecofood’s gazpacho olives are made from organically produced olives on the island of La Palma (Canary Islands), World Biosphere Reserve, known as La Isla Bonita (The Beautiful Island) for its beautiful and diverse landscapes.

The fields are located specifically in the municipality of Tijarafe, at various altitudes ranging from 270 m above sea level to 800 m and in areas with excellent conditions for agroecology. After our plantations and crops were affected by the volcano that erupted in 2021, we hope that all the nutrient-laden ash, together with the island’s pure air, its incomparable mountain water and its wonderful light with many hours of sunshine, will contribute to improve the production and quality of our raw materials.

After harvesting, which is done by hand, the olives are subjected to a first quality control, in which they are carefully selected by hand, removing all those that are not considered suitable for having any defect. Then they go through a process in which they lose their bitterness and reach the desired flavor for our recipes.

Finally, the olives are subjected to several rinses, all unfit olives are selected and removed, and all other ingredients are added according to the recipe, resulting in natural, healthy, delicious and nutritious gazpachas olives. These are hand-packed in glass jars that undergo a pasteurization process.

Conservation

Our gazpacho olives last in good condition for two years. To preserve them properly, they should be kept in their original jar or, better, transferred to an airtight glass jar and stored in a cool, dark and dry place.
