Herbed olives are a healthy and natural alternative to conventional salty snacks and an ideal accompaniment to salads and other dishes. A product suitable for vegans, gluten-free and lactose-free, handmade from organic olives produced in-house, mixed herbs and other natural ingredients.

Origin

VidaViva Ecofood’s olives with fine herbs are made from organic olives from the island of La Palma (Canary Islands), a world biosphere reserve and known as La Isla Bonita (The Beautiful Island) for its beauty and diversity of landscapes.

The agricultural areas are located especially in the town of Tijarafe, at an altitude of 270m to 800m and in areas with quite favorable agroecological conditions. After the 2021 volcanic eruption has affected our plantations and crops, we hope that all the nutrient-rich ash, along with the island’s clean air, unparalleled mountains and water, and many hours of sunlight will help improve production and the quality of our raw material.

After being harvested by hand, the olives undergo a first quality control, which is carefully selected by hand to eliminate olives that are considered deficient due to defects. Then, these olives are soaked in brine until they lose their bitterness and acquire the flavor we want for our recipe.

Finally, the olives are rinsed several times, the unsuitable olives are removed and all the other ingredients are added according to the recipe to finally obtain natural, healthy, tasty and nutritious olives. They are hand-packed in glass jars that undergo a pasteurization process.

Conservation

Our herbed olives last in good condition for two years. To preserve them properly, they should be kept in their original jar or, better, transferred to an airtight glass jar and stored in a cool, dark and dry place.
